250g Pasta (e.g. farfalle or penne)

2 large onions, thinly sliced

2 tablespoons butter

1 tablespoon olive oil

4 cloves garlic, minced

1 teaspoon dried thyme

1 teaspoon sugar

4 cups vegetable broth

150g cream cheese, cubed

100g grated Gruyère cheese (or another melting cheese)

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

In a large pot, heat the butter and olive oil over medium heat. Once hot, add the sliced onions and a pinch of salt. Cook for about 10-15 minutes, stirring frequently, until the onions are caramelized and golden brown.

    Add the minced garlic and dried thyme to the pot, stirring for an additional 1-2 minutes until fragrant.

      Sprinkle the sugar over the onions and stir well. This helps enhance the caramelization of the onions.

        Pour in the vegetable broth and bring to a simmer. Add the pasta to the pot, stirring to ensure the pasta is submerged in the broth.

          Cook according to the pasta package instructions, usually around 9-12 minutes, stirring occasionally until the pasta is al dente and the liquid has mostly absorbed.

            Lower the heat and add the cubed cream cheese, stirring well until combined and creamy. If desired, add some reserved pasta water to achieve your preferred consistency.

              Remove from heat and stir in the grated Gruyère cheese until melted and well incorporated. Season with salt and pepper to taste.

                Serve hot, garnished with fresh chopped parsley for a pop of color and freshness.
